Burger/Sausage mix

Makes 40 portions

Ingredients:

10 onions, finely chopped

10 cloves of garlic, peeled and crushed

8 cups of red lentils

8 cups of oats

6 tablespoons mixed herbs / fresh herbs such as parsley/ thyme/ sage/ coriander

4 litres of stock (boiling water and vegetable bouillon / stock cubes)

Oil for frying

  1. Fry the onions and garlic until soft, in the bottom of a medium sized pan.

  2. Add the red lentils and fry for a few minutes until all coated in oil, stirring well.

  3. Add herbs, stir in well for 1 minute

  4. Add the stock and bring to the boil, then simmer for 15 minutes, until the lentils are soft and the water has been soaked up fully.

  5. Leave to cool.

  6. Mix in the oats until you have a thick enough consistency for making the sausages / burgers.

  7. Scoop up a little of the mixture into your (washed!) hands and form into a burger / sausage shape.

  8. Fry in batches for a few minutes on a medium-high heat, turning regularly to avoid burning, until golden brown.

This is only a base recipe, almost anything that will quickly cook if fried can be added: other herbs or spices, mushrooms, shredded veg, breadcrumbs, seeds – whatever!
